Berry Crisp

The berry part (measurements are approximate)…

Blueberry Crisp
  • a bunch of berries (I use a loaf pan and filled it about 2/3's full)
  • juice of one orange and some orange rind
  • a bit of brown sugar
  • about 1/3 cup corn starch
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg

The topping part…

  • about 1/2 cup brown sugar
  • about 1/3 cup almonds (slivered or pieces)
  • about 1/3 cup oatmeal (the long cooking kind)
  • about 1/2 cup white flour
  • about 1/4 cup whole wheat flour
  • about 1/2 cup butter

Directions

  1. Mix the berry part and put into a pan
  2. Mix the topping part so that it is a combination of sticking together and some still dry.
  3. Put the topping on the berries and bake in an oven 350 for about 45 minutes.

You will know it is done when you can smell it and see the juices bubbling!!
Good warm or cold

Cobblers are an American deep-dish fruit dessert or pie with a thick crust (usually a biscuit crust) and a fruit filling (such as peaches, apples, berries). Some versions are enclosed in the crust, while others have a drop-biscuit or crumb topping.
Crisps and crumbles are baked with the fruit mixture on the bottom with a crumb topping. The crumb topping can be made with flour, nuts, bread crumbs, cookie or graham cracker crumbs, or even breakfast cereal. Crumble are the British version of the American Crisp.
A Betty or Brown Betty consist of a fruit, most commonly apples, baked between layers of buttered crumbs. Betties are an English pudding dessert closely related to the French apple charlotte. Betty was a popular baked pudding made during colonial times in America.

Blueberry Chutney

Hummus

Ingredients

  • 1/2 cup red wine vinegar
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 tsp garam masala
  • 1 tsp minced peeled fresh gingerroot
  • 1 tsp freshly grated lemon zest
  • 1/4 tsp salt
  • 3 cups picked over blueberries
  • 1 cup chopped onion
  • 1 firm ripe peach, peeled and chopped coarse

Directions

Boil first 6 ingredients together. Stirring about 2 minutes. Add remaining ingredients and simmer until thickened - about 1 hour. Makes 1 1/2 cups.
Can spoon into a jar and cool completely before sealing.
